Fit Food: Peanut Butter Chicken

Give your favorite chicken a decidedly Asian flavor.

INGREDIENTS:

2 tablespoons reduced fat peanut butter
1 tablespoon fresh lime juice
2 teaspoons soy sauce
1 clove garlic, chopped
1/3 teaspoon curry powder
A pinch of ground cayenne pepper
4 chicken breasts, skinned, deboned, and halved
Salt and pepper to taste

METHOD:

1. Preheat and oil grill.
2. Add peanut butter, lime juice, soy sauce, garlic, curry powder, and cayenne pepper in a bowl and mix thoroughly.
3. Place chicken on the grill and brush these with half of the peanut butter mixture. Grill for 6 to 8 minutes.
4. Turn chicken and brush with remaining sauce. Continue grilling 6 to 8 minutes or until chicken is fully cooked.
5. Sprinkle with salt and pepper to taste. Garnish with parsley leaves.
